White Chocolate Caramel Filled Snowflake Candies

I love Christmas. LOVE it. But, even I sometimes find myself getting bored of sitting on the sofa watching festive TV specials or another low budget somewhat disappointing Christmas movie. When boredom starts to creep in I like to find something to keep my hands busy, so I pull out an in-progress craft project or head to the kitchen to make a tasty treat.

This recipe for white chocolate caramel filled snowflake candies couldn’t be simpler. You might usually shy away from anything which requires chocolate because tempering it is such a faff, and white chocolate, in particular, is known to be difficult to work with, but fear not these treats are quick and easy to make.

These snowflake candies are perfect for putting out for guests visiting over the holidays alongside a comforting cup of something hot or, why not make some little gift bags or boxes and wrap them up for stocking fillers?

Ingredients:

Makes 12 candies

  • ½ cup white candy melts, or white chocolate
  • ¼ – ½ cup caramel bits
  • Silicone snowflake mould
  • Pastry brush

Directions:

  • Melt your candy melts according to the directions on the packet [find some tips here!]
  • Spoon melted candy into each mould and use the pastry brush to make sure that the entire mould cavity is covered with candy.
  • Pop the candy filled mould into the freezer.
  • Melt the caramel bits according to package directions.
  • Retrieve the mould from the freezer and add a spoonfull of melted caramel into each mould cavity.
  • Top with more melted candy and allow to cool.
  • Pop each candy out of the mould and enjoy!
