At this time of year it’s hard not to give in to the urge to hibernate at home under a thick blanket with some delicious treats and while away the evenings and weekends catching up on our favourite TV series, video games or just scrolling through social media in the warm.
You know what? Why fight it! We all deserve to snuggle up and have some me time and this recipe for chocolate chip pumpkin bread makes the perfect snack to enjoy while you are relaxing.
You might think that pumpkin and chocolate would not be a good flavour match but I am here to tell you that you’re wrong! They work really well together. Pumpkin is known to go well with many flavours from traditional pairings such as nutmeg, cinnamon and vanilla but also dark and white chocolate, cranberries, cayenne and all manner of dairy.
Despite ‘bread’ being in the title of this recipe, it’s not a complicated one. I promise. All you need to do is mix the ingredients in stages then turn out the dough into a pan and bake! Why not go the extra mile and add your favourite autumn-inspired spices to the mix, or melt some extra chocolate to drizzle across the top once it’s baked? YUM!
If like me, you are plant-based it’s super easy to swap out the milk and chocolate chips for vegan alternatives.
Ingredients:
- 2 ¼ cups all purpose flour
- 1 cup sugar
- 1 ½ tsp baking powder
- ¼ tsp salt
- 15 oz can of pumpkin
- ⅓ cup milk
- 1 cup chocolate chips
Directions:
- Preheat the oven to 350 degrees. Grease a bread loaf pan.
- Add 1 cup of the flour, sugar, baking powder, and salt to a large bowl, and mix on low for 30 seconds.
- Add the rest of the flour, pumpkin and milk, and mix on medium low until the dough is solid.
- Add chocolate chips and stir to combine.
- Dump the mixture into a bread pan, and bake for 35-40 minutes.
