Did you know that S’more is a contraction of the words”some more”? I have to admit I didn’t know that but it’s obvious now I think about it. Who can stop at just one? S’mores first appeared in a cookbook in the early 1920s, where it was called a “Graham Cracker Sandwich”, and this sticky sweet treat has been popular ever since, particularly around a campfire.
A S’more is usually made up of one or more toasted marshmallows and a layer of chocolate sandwiched between two pieces of graham cracker (or digestive biscuit here in the UK), but if you’re in the mood for chocolatey, marshmallowy goodness but don’t want to have to make up a fire these S’more cake mix cookies are the perfect alternative and are super easy to make!
Makes 2-3 dozen
Ingredients:
Yellow cake mix
½ cup vegetable oil
2 large eggs
1 cup mini chocolate chips
1 cup mini marshmallows
½ cup chopped graham crackers/digestive biscuits
Directions:
Preheat the oven to 175°C.
Add cake mix, oil, and eggs to a large bowl and stir until fully mixed.
Add chocolate chips, marshmallows, and graham crackers. Stir to combine.
Use a cookie scoop to gather spoonfuls of dough, and drop onto a baking sheet, spaced 2 inches apart.
Bake on the middle rack in the oven for 10-12 minutes.
